In 2002 Elmes moved to Sydney to open the largest new restaurant in circular Quay Wild Fire restaurant, with a $5 million dollar fit out and a million dollar kitchen with views to the opera house. Restaurant Wild Fire became very successful from open. After 1 year another party to open the new eastern hotel in Bondi Junction approached Elmes, with a budget of over $30 million they purchased and built the Eastern hotel. Elmes was responsible for designing the 3 restaurants and kitchens in the new hotel.
In 2005 Chef Elmes heading the well-known Ravesis hotel in Bondi beach and stayed with company for 12 years during that time Elmes starting his own catering company, the wonderful cuisine catering company. During this time Elmes was running up to 4 different venues at the same time, in its peak summer Elmes was capable of running functions in all venues of over a 1000 customers per day.
